Cherry Chia Pudding

This delicious, refreshing, protein-packed Cherry Chia Pudding is made with fresh cherries, chia seeds and hemp hearts.

Friends, it’s cherry season!!!
I could eat fresh cherries by the bushel, despite the fact that the seeds kind of gross me out and make me think of that scene from The Witches of Eastwick that scarred my childhood (I won’t post a clip because, ew, but you can click the link to watch it for yourself). For those few months in the spring to beginning of summer, it’s everything cherry in my house.

This recipe uses chia seeds, and yes, they are the same as seen on TV (though I recommend buying Chia Seeds as a food product rather than in a growing kit). When exposed to liquids, chia seeds form a gelatinous coating, sort of like tapioca. Ancient Mayans and Aztecs held them as sacred, and used them to stay hydrated while running long distances.
In addition to chia seeds, this pudding gets an extra creamy nutritional boost from Hemp Seeds, which are a super source for protein and beneficial fats.

This Cherry Chia pudding is the perfect snack to stay hydrated when the temps outside begin to rise, or for that extra boost of protein before a sweaty workout.

Ingredients
- 1/2 cup water or unsweetened almond milk
- 1/4 cup Hemp Seeds
- 2 cups fresh cherries, pitted
- 1 t vanilla
- 1 large pitted date
- 1/2 cup Chia Seeds
Instructions
- Blend all ingredients besides the chia seeds in a high powered blender until smooth.
- Transfer to a bowl and stir in the chia seeds until well combined.
- Cover and place in refrigerator for at least an hour to set.
- Spoon into bowls or cups, layering fresh cherries in between, and top with additional hemp seeds, coconut flakes and/or additional cherries.
